Sweet Potato & Spinach Smoothie Bowl

After a long week of work with little time to hit the supermarket, I find myself assembling some odd yet sweet and nutritional concoctions. I feel pretty confident to say that they usually turn out to be hit.

Delightful mix of sweet potato, spinach, tiger nuts, turmeric, dandy blend, collagen powder and coconut milk. 

Topped with hemp seeds, cacao nibs, bee pollen & a drizzle of honey. 

For this smoothie bowl I used frozen spinach. I bake the sweet potato ahead of time, usually the night before while I start to settle for bed. Buying frozen organic spinach has been key in my life. I don't have to worry about it wilting before I get to eat it and it's perfect in smoothies because it has a neutral taste yet is packed with health benefits. The dandy blend is such a liver lover with its detoxifying qualities. And I use Great Lakes beef collagen powder for protein and amino acids. It's easily digestible and doesn't have a flavor, making it perfect to add to any smoothie or beverage. 

1 small sweet potato or half of a large one

1 cup of organic spinach, frozen or fresh

5-6 tiger nuts 

1 tsp of turmeric, fresh or powder

1 tsp of dandy blend

2 tbsp. Great Lakes beef collagen powder, the green label

4 oz. of full-fat coconut milk

4-6 oz. of purified water
