‘Mango-Sun Nice Cream’ Recipe

I’ve wow’d my friends with friends with this one earlier this summer and was recently reminded how revered it is for its deliciousness and simplicity. So let me share this with you.

This recipe is a simple, all natural, vegan, plant-based dessert that everyone loves - as long as they love the taste of mangoes !

Mangoes are rich in fiber and antioxidants to support healthy glow and gut.

Mangoes and healthy fats also support your Sacral Chakra ~ your energy center for womb healing, love, emotions, and sexual desire, creativity, and feminine power.

Ingredients

  1. 3 cups frozen mango chunks

  2. 1/2-1 can of full fat coconut milk or coconut cream (Trader Joe’s brand is excellent)

  3. *optional to add 1-2 tbsp of maple syrup, however it’s already sweet, I prefer sans.

Method

  1. Pour the coconut milk and maple syrup into a food processor. Pulse on low for 2 to 3 seconds to combine.

  2. Add the mango chunks and pulse on medium speed for 20 to 30 seconds, or until you have to scrape up the sides and tamper it down. Pulse again until well-blended, smooth, and creamy.

  3. Serve immediately in a bowl or ice cream cone and add your toppings.

  4. For leftovers, you can transfer it to a freezer-safe container. Pull it out of the freezer for at least 30 minutes before serving again.

Toppings

  • fine tear a couple of mint leaves into tiny pieces and a little sprinkle of flaky Maldon salt for a refreshing kick

  • chocolate chips

  • coconut flakes

  • add a dash of cinnamon to invite autumn feels

  • I had a friend add some chopped frozen cherries :)
